Ok. I admit it. I've misspelled brussels sprouts about fifteen times this morning. I keep leaving off the 's'. I want to spell it brussel sprouts. Which is why it says "Home Grown" in the title. I have always steamed them. But I wanted to try something different, since these were special. <b>Boiled Peanuts in the South are a staple.</b> I'd guess that probably 90% of the people I know eat them. Making good peanuts isn't difficult. All you have to do is get some water boiling, add salt, and then the peanuts. After about two hours they will be ready. The only trick is how salty you want them to be. Here's the key. The saltier you like them, the longer you let them soak.

This lunch box was pretty spectacular, if I do say so myself. I wanted to do something sort of light. Wraps fit that description, since it's not a lot of bread. The fillings also lean to the healthier side. Refried bean base, avocado, lettuce, tomato, and black beans on the top give it plenty of flavor. Especially when you sprinkle it with fresh ground pepper and sea salt. I also cut up fresh oregano, basil, and thyme to sprinkle on it. This was such a deviation from my normal lunch box. My wife promised not to look at it until lunch. When she did, she was really surprised.<br>

About a year ago my wife turned my smoker into a spice garden. She said it was either that or she would call the fire department. The truth is the dang thing was rusted out. I had some bananas that were over ripe. I had been watching them for a couple of days. I knew I was going to use them for banana bread. But I didn't want to just make plain old banana bread. I like experimenting with recipes. I also don't like to see anything to to waste, especially food. So I decided to look and see what else I had hanging around.<br>

Looking in the pantry I found some walnuts and pecans. There wasn't enough of either of them to make a pie. I had made banana bread with each of them before. But I had never added them together. I had about two cups between both of them. I figured I would use them all. I knew that the nuts would absorb a lot of the liquid in the bread. So I started thinking about what I could use to offset this. That's when I remembered the 2/3 bar of cream cheese.<br>

Every Christmas for 30+ years I was the benefactor of my mother in-law's generosity. Shes's a great cook. Her Italian recipes are so delicious you can't begin to improve on them. One of those recipes is some sort of 'Biscotti' cookie. The first time I tasted I had to ask 'what's that flavor?" I had tasted it before, but never in this combination. It wasn't something I'd go out of my way to make. I'd heard of it. Mostly from Martin Shervington. I think he lives off the stuff. It wasn't that I hadn't had any of it before either. It just wasn't something that had stuck in my head as a must food. If I had to guess, it had probably been 10, maybe 20 years. But I decided it was time to try it again. Revisit it so to speak. I Decided To Use A Crockpot Mainly because it's hard to mess up a crockpot recipe. You can cook anything in it and it comes out OK. There something about the low heat and flavors mixing around all day. The obvious benefit is that when people eat it, they think that you've slaved over it all day. Especially if you put it in some sort of bowl, pan, etc. before you serve it. </span><br>

Blame It On My Eyes</h3>

My wife has this little expression. She says "Your eyes are bigger than (insert item)." She uses it to point out my proclivity for "over-anything-ing". For example, when we we went to look at automobiles I was looking at the Escalades. She looked at me and said 'Your eyes are bigger than your wallet!" So we drove off in a Cruze. She's happy with it and my wallet is happy too. <br>

Christmas 2014</h3>
Apparently our family had burgers on our brains. I bought burger presses for all the boys. I got them because I really like them. I've had one for years. It's the old kind with a hinge. It's metal. It's heavy. And I use it whenever I'm making some sort of special burger. So this was a gift I would be happy to give. Imagine how happy I was when I got one back! Especially one that would make stuffed burgers. It was exactly what I wanted. After eating this, I had to lay down for a nap. It is a big, filling meal.<br>

I Waited One Whole Day</h3>
That's how much I wanted to use this thing. So I headed to the store and bought hamburger meat, cheese, mushrooms, and onions. I had decided to keep the first try as easy as possible. I'm glad I did. They were tasty, huge, and very moist. The stuffing stayed in place when I cut them in half. I don't thank that would have happened if there were more stuffing.<br>

Use What You Have</h3>
I'm a big believer in that. I don't like to see things go to waste. Especially when it's something I've grown. In this case, I had some sweet potatoes I grew in my garden. They had been curing for a couple of weeks. Originally, there was a large plate of them. But I only had a couple left, and I wanted to use them up. I wasn't in the mood for sweet potato chips, and I didn't want to crock pot them. So I decided that I would bake them. But sweet potatoes do not a dinner make. I needed some more stuff.<br>

That's the other stuff that I had available. So I knew I wanted to make something using those ingredients. But I didn't want to make a big mess. I didn't really know what I was going to make. I did know that it would have to fit in one pan, or baking dish. And I knew the ingredients all required different cooking times. The vegetables would take the longest. They would need to start cooking first. .<br>

Baked Sweet Potato and Corn Stuffed Acorn Squash</h3>
I knew that if I didn't slice the sweet potato, it would take much longer to cook. It's A Completely Meatless Chili</h2>

I call this my PETA Pal Chili. That's because except for the ground beef, diced chicken breast, sliced kielbasa, ground sausage, stew beef, cubed pork, ground veal and bacon...it's completely meatless. I can't take credit for the name though. It was named by a friend of mine. He came over a vegetarian and left a carnivore. </div>

It's The Aroma</h3>

He couldn't help himself. When this stuff gets cooking it's an olfactory delight. Certainly heaven smells like this. And it cooks for about 6 hours. Don't worry though. You're not going to have to stand over a hot stove or grill. This is cooked in a crockpot. All you have to do is load it up, leave it, stir it, and then eat it. You will, of course, reap the benefits of others 'thinking' you put a lot of effort into it. Very few things tasting this good require so little work. </div>

Does It Have Bacon?</h3>

Of course it does. It has to. It's the easiest, best, and most filling chili in the world. It's got the best meats in the world. Leaving out bacon wouldn't be prudent. Not only that but <a class="g-profile" href="https://plus.google.com/100860818239902042246" target="_blank">+Sherrill Duce</a> and <a class="g-profile" href="https://plus.google.com/109499407181545454680" target="_blank">+Maggie Unzueta</a> probably wouldn't eat it without it. Both of them are bacon aficionados and it's a requirement for any dish that mentions them.<br>

Eggplant Is Great!</h2>

I like eggplant. In fact, I'm growing them in my garden right now. So when the recipe called for Cold Stuffed Eggplant, I was an easy sale. The 'cold' part didn't sound that good though. I thought it was some sort of refrigerated salad thing. But it wasn't. It was clearly a stuffed eggplant, cooked in the oven, and involving meat. </div>

What About Difficulty</h3>

It wasn't the easiest dish I've ever made. And it certainly wasn't the hardest. But it was definitely one of the best. I'll make this recipe again, soon. I would probably go to someones house and make it for them if they bought the stuff. It really is that good. </div>
