Tortilla, Jordan Almonds, Macadamia Cookies Lunchblox

This lunch box was pretty spectacular, if I do say so myself. I wanted to do something sort of light. Wraps fit that description, since it's not a lot of bread. The fillings also lean to the healthier side. Refried bean base, avocado, lettuce, tomato, and black beans on the top give it plenty of flavor. Especially when you sprinkle it with fresh ground pepper and sea salt. I also cut up fresh oregano, basil, and thyme to sprinkle on it. This was such a deviation from my normal lunch box. My wife promised not to look at it until lunch. When she did, she was really surprised.


What's In The Wrap

  • Plain tortilla
  • Refried bean base
  • Romain Lettuce leaves
  • Sliced smoked chicken
  • Sharp Cheddar Cheese slice
  • avocado
  • Sliced Tomato
  • Topped with black Beans

What's In The Top

This really is one of my favorite things. The top part of this lunch box. There are scoops, guacomole, sweet pickles, wheat thins, jordan almonds, a white chocolate macadamia nut cookie cut in half and stacked, and then the salsa is put in the small container. that fits in the bottom of the box. Once you get the hang of figuring out what goes in what section, it makes packing it fun. It's actually an art, if you want to know the truth about it.It's not unusual to have so much stuffed in either the top, or the bottom...that someone can split it into two lunches. I love these things.

What's In The Bottom

As always, the main course is in the bottom. In this case, it's 1/2 of the delicious wrap described above. I also closed the smaller container and put it in the bottom as well. The reason I put it in the smaller container is that it stays fresher that way. I've tried putting it the sauces in one of the smaller compartments, but it usually sloshes out onto the other foods. That's not good, especially when it's pickles, jordan almonds or cookies....as is in this meal. It's also a good idea to put anything that might need micro waving in the bottom as well. That way the person enjoying the fruits of your labor won't wind up microwaving jello.
The best advice is to just think about the natural act of eating. What needs to be hot? What needs to be cold, and how to make it easy to keep that way.
