Whole Smoked Chicken Recipe
About a year ago my wife turned my smoker into a spice garden. She said it was either that or she would call the fire department. The truth is the dang thing was rusted out. In fact, I'll add a picture of it this post. I think you'll agree it was past it's prime. So this Mothers Day I had a surprise for her. I gave her an Oklahoma Joe Smoker. I'm such a giver. So after making the mods as suggested at Smoking Meat Forums, I fired it up. And I decided to smoke chickens.
Smoking VS Grilling Chicken
Smoking chicken and grilling chicken are two different things. Grilling requires close proximity to hot coals. The cook eyeballs the chicken to determine if it's done or not. Smoking has lower heat and longer cooking times. You can't really eyeball a smoked chicken for doneness.Monday, February 9, 2015

Blame It On My Eyes
My wife has this little expression. She says "Your eyes are bigger than (insert item)." She uses it to point out my proclivity for "over-anything-ing". For example, when we we went to look at automobiles I was looking at the Escalades. She looked at me and said 'Your eyes are bigger than your wallet!" So we drove off in a Cruze. She's happy with it and my wallet is happy too.

Apparently our family had burgers on our brains. I bought burger presses for all the boys. I got them because I really like them. I've had one for years. It's the old kind with a hinge. It's metal. It's heavy. And I use it whenever I'm making some sort of special burger. So this was a gift I would be happy to give. Imagine how happy I was when I got one back! Especially one that would make stuffed burgers. It was exactly what I wanted. After eating this, I had to lay down for a nap. It is a big, filling meal.I Waited One Whole Day
That's how much I wanted to use this thing. So I headed to the store and bought hamburger meat, cheese, mushrooms, and onions. I had decided to keep the first try as easy as possible. I'm glad I did. They were tasty, huge, and very moist. The stuffing stayed in place when I cut them in half. I don't thank that would have happened if there were more stuffing.

Sweet Potato Chicken with Corn Stuffed Squash
Use What You Have
I'm a big believer in that. I don't like to see things go to waste. Especially when it's something I've grown. In this case, I had some sweet potatoes I grew in my garden. They had been curing for a couple of weeks. Originally, there was a large plate of them. But I only had a couple left, and I wanted to use them up. I wasn't in the mood for sweet potato chips, and I didn't want to crock pot them. So I decided that I would bake them. But sweet potatoes do not a dinner make. I needed some more stuff.Chicken, Corn and Squash
That's the other stuff that I had available. So I knew I wanted to make something using those ingredients. But I didn't want to make a big mess. I didn't really know what I was going to make. I did know that it would have to fit in one pan, or baking dish. And I knew the ingredients all required different cooking times. The vegetables would take the longest. They would need to start cooking first. .
Baked Sweet Potato and Corn Stuffed Acorn Squash
I knew that if I didn't slice the sweet potato, it would take much longer to cook. So I sliced it up by hand, drizzled it with olive oil, and sprinkled some Regas Restaurant, Au Naturall Pure Seasoning on it. Laying it in the baking dish, I layered it in a way that would speed up it's cooking

BarBQue CrockPot Chili with BACON
It's A Completely Meatless Chili
I call this my PETA Pal Chili. That's because except for the ground beef, diced chicken breast, sliced kielbasa, ground sausage, stew beef, cubed pork, ground veal and bacon...it's completely meatless. I can't take credit for the name though. It was named by a friend of mine. He came over a vegetarian and left a carnivore.
It's The Aroma
He couldn't help himself. When this stuff gets cooking it's an olfactory delight. Certainly heaven smells like this. And it cooks for about 6 hours. Don't worry though. You're not going to have to stand over a hot stove or grill. This is cooked in a crockpot. All you have to do is load it up, leave it, stir it, and then eat it. You will, of course, reap the benefits of others 'thinking' you put a lot of effort into it. Very few things tasting this good require so little work.
Does It Have Bacon?
Of course it does. It has to. It's the easiest, best, and most filling chili in the world. It's got the best meats in the world. Leaving out bacon wouldn't be prudent. Not only that but +Sherrill Duce and +Maggie Unzueta probably wouldn't eat it without it. Both of them are bacon aficionados and it's a requirement for any dish that mentions them.

+Maggie Unzueta posted a recipe for some eggs last week. They were Scotch Eggs. I had never heard of them. But one look at the picture and I knew I'd have to try them. I'm going to embed her post at the bottom of this blog. That way I can do the lazy man thing and not have to retype it. The only changes that I made were the bread crumbs. The recipe she posted called for Panko crumbs. I had italian, so I used those. I would use them again too, although I've added Panko crumbs to my shopping list now.

Apple Lime Cider BBQ Chicken
Although it was made up on the spot, this recipe falls in the category of one of my all time favorites. It's easy, it's inexpensive and it tastes like a million bucks. My guess is that some smart enterprising chicken chef somewhere will find this, add it to their repertoire and become famous. It really is that good. And the only reason that it's even here is because I didn't have any lime juice.

Crockpot Orange Chicken Recipe
I'm sure you've noticed the number of chicken recipes on this site. You've also probably noticed there are quite a few crock pot recipes. That's because I'm basically a lazy cook. I want a big payoff as a result of very little work. By work I don't mean the amount of time it takes to cook. I mean the amount of effort it takes to prepare. Crock pot cooking takes time, but very little work. Take this very good knock off of the popular oriental Orange Chicken Dish. So...yes, this will take some time to cook… but it doesn't take that time to to fix it. You can make this and your wife will love you for it. Your kids will clean up the dishes, and your neighbor will cut your grass. A great dinner, not much effort.

Parmesan Ranch Baked Chicken Recipe
Just the name is enough to make my mouth water. Parmesan cheese is one of my favorite 'small cheeses'. Ranch dressing is considered a staple in my pantry. I like chicken because of it's price and I think of it as a healthier meat. Top that with Italian Bread Crumbs and you better use a fork to try and get the last piece. I promise that's what I'm using. If you're hand gets in the way of my fork you may not be happy with the result. So make sure you make plenty of this. It's going to be popular.

Crock Pot Cubed Steak Recipe
I found a recipe that was sorta/kinda like this one. It looked pretty good. But apparently it was written by somebody that didn't know much about cooking. It had things about recipes that people that cook like me don't care about. Crazy things. Things that slow you down. Things that make no sense at all. In other words, there were all sorts of measurements in it. It called for 1 lb this, 1 can of that, a half pint of whatever. To top it off, there was even a place that said cook it for a specific period of time, and let it simmer for another. There were just too many dang instructions for me to follow.

A smoker back in the day was a social tool. If you were good at it, people talked about it. It was viral in it's on way. Even though the 'views' were different, they were still there. Word would get out that you were going to be cooking something on the grill, and somehow people would wind up at your place. So the smoker was as powerful as an X Box 360, or whatever the newest digital hotbox happens to be.But I Don't Care About Games
What I care about is cooking good food. I care about cooking food that doesn't take a rocket surgeon to figure out how to make it. Something guys can make. When I no longer had my smoker, I had to figure out how to make them in the oven. Ribbs can lead to better things. Sometimes ribs are the second best thing you'll have all day. Spend some time on them and don't rush it. Just like the numero uno thing for the day... you'll both be glad you did. So keep reading for the best ribs you can make in an oven.

Eye of Round Roast Beef… the easy way
I'll be honest. There were several things that caught my eye about this recipe. The first was that it was so simple. Turn the oven on... get stuff hot.... turn the oven off... wait for it to cook. It seemed so easy that I thought I might give it a try. If it was good, then I'd have something to show for pretty much ZERO work on my part. If it didn't, then I hadn't spent much trying it (since the meat on this is based on the the eye of round roast.. which is the cheapest cut of meat you can buy). The reason it's so cheap is because it's so dog gone tough. When you eat this stuff, it's hard to tell whether you're biting into shoe leather, or if there's actually some piece of meat hidden in there somewhere. With this recipe... you'll find out that there IS some value to this cut of meat, and you'll look forward to serving it.

World's Best BBQ Ribs Recipe
I Make Damn Good RibsAnybody that knows me, knows that I love ribs. I get compliments on them all the time, so I figured this would be the best way to share the recipes and tell you how I prefer to cook them. The steps are numbered… with some other stuff in between.
But it will be worth it. Just do yourself a favor, and don't cut corners. You'll be glad you did at the end. I would suggest that you cook one rack of ribs more than you think you'll need. The reason for that is that it will give you something to snack on every time you turn them. Somewhere around hour 8 these ribs will become world class. You could serve them at that time with no complaints. But if you continue to munch on the extra rack, and finish the whole recipe....you'll go kiss yourself when they are done So here's how you do it |
