I Took Your Suggestions For Tomatoes


This week I asked a simple question about tomatoes. I asked what everyone did with the tomatoes that have bad spots in them. Whether it's from blossom end rot, worms, or a fungus, it happens. I've always had plenty of tomatoes, so I have been tossing them into the compost. I decided I wanted to find out what others think. I also got a suggestion for cucumbers. These are the results.

How To Boil Peanuts Like A Rocket Surgeon

Boiled Peanuts in the South are a staple. I'd guess that probably 90% of the people I know eat them. Making good peanuts isn't difficult. All you have to do is get some water boiling, add salt, and then the peanuts. After about two hours they will be ready. The only trick is how salty you want them to be. Here's the key. The saltier you like them, the longer you let them soak.

According to some people, men can't tell time, can't follow directions and can't cook. That's simply not true. The owner and author of the site, me..  can cook. This site is simply a way for me to keep up with my recipes without putting it into my other 10 or so blogs. Everything is Google-ized, so it's connected to all my other stuff. This site gets it's name from road trips when I was in my 20's. By the time we would head home all we could afford was a loaf of bread and some potato chips.

Amaranth Date Nut Bread

What is Amaranth?

I have a habit of checking out the 'clearance' section at Kroger. I don't buy the day old bread, outdated soups/cereals, or half crushed containers of anything. I look for utensils, appliances, and other gadgets I have no room or use for.  Sometimes I buy gifts. Sometimes I buy gags. Sometimes I buy things because my wife says I don't need it.  I'm a guy. We do that kind of stuff.  Every now and then I see something that's interesting. That's what happened the day I saw the overstocked Amaranth, Teff, and Quinoa. I simply couldn't resist the urge to try new stuff. Besides, I had just purchased some really neat glass containers. Big, bulky and brawny enough that Cheryl didn't want them on the counters.  Perfect. 

What Do You Do With It? 

So I grabbed up several packages of each, and took it home. I already knew what Quinoa was. But I had no idea about the other stuff. I didn't know how to cook any of it. Recipes all looked too complicated or called for impossible cooking methods. I don't have an underground, rock lined, solar heated sand oven. So I decided to look on the package and adjust the best I could.  For the first grain I decided I'd make an Amaranth Date Nut Bread.  I wasn't sure that I would like it.  I'm not just saying this to hear myself talking... this bread is damn good.  This Amaranth Date Nut Bread recipe is pretty easy, and honestly well worth trying.  I've never been happier about a purchase from the clearance section.

Strawberry Ice Cream Popcorn

I wanted some popcorn.  I had already made Italian, Hot Chocolate, and Buttered Banana Bread Popcorn this week. I wanted something different. So I do what I always do. I looked in my pantry hoping something would 'pop out' at me. I didn't have anything any particular I was looking for.  Being open minded allowed me to run across a Strawberry Ice Cream Mix. I wasn't sure how old the mix was, and I  thought about how sticky it might be.  But mostly I thought about how much I like ice cream. So I decide to give it a try.  You should too.

 Since my last post "You Had Me At Savory" I've been struggling with addiction. I thought I had it kicked.  Although I had never quit completely, I had cut down to three bowls a week.  Ok. Sometimes four bowls. But at least it wasn't every day. I no longer had to come up with creative was to satisfy my craving. I didn't have to worry about running out of supplies. I could go days without experiencing the craving.  Not anymore. It's 9:30PM and I need a fix.  So, I'm about to pop. I'll start shaking in about ten minutes.

Dear +Maggie Unzueta , +Joann Woolley and +Larry Fournillier Sorry I couldn't make the Bacon Popcorn Hangout  That 'thing' that my wife had me do that day was.. well.. kinda important. It was our first grandchild's (boy) Baptism. If she ever learns that I had forgotten it when we were discussing me being in the hangout the other day... I'll be able to slide popcorn in through my missing teeth. :-).  So I watched the replay, and when I heard the word ‘savory’ I knew there were some popcorn aficionados in the group.  I thought I'd share some stuff myself.

The first time I heard the words Kale Chips, they got my attention. I thought they were talking about something to do with NASCAR. Maybe the three time champion had decided to bring out his own flavor of BBQ 'Tater' Chips?  What could be more inviting than auto racing mixed with potato chips?  I didn't see them in the chip aisle, so I asked one of the employees.  He said I was looking in the wrong place, and I needed to be in produce.
I still didn't see them.  I asked the produce manager, and he told me I'd have to make them.  He walked me over to this big clump of green leafy stuff called kale.  He said just to bake them at 350 for about 15 minutes and they would be 'Kale Chips"  I wasn't crazy about the idea of greens, but the word chip held my attention. So I bought some.  I've bought plenty more since.
