Cucumber and Purple Onion Quick Pickle
This was suggested by Mr. Santa Mark himself. I was doing some work at his house. We walked out to his garden and talked a bit. He didn't have any cucumbers, and I asked him where they were. He said he bought his at the grocery store. I told him I had a bunch of them I had just pulled and would be glad to give him some. He told me he had a very easy quick recipe for them. Since he's a guy, I knew it would be both quick and tasty. Here it is, and it is all of the above.
Ingredients and Directions
Cut up the onions, tomatoes, basil and oregano. I sliced mine, but feel free to chunk yours. Pour in some apple cider vinegar and add some sugar. Cut up some basil, oregano, and rosemary. Toss them in the mix. Now taste it. If you like the way it tastes, you're finished. If you don't like it's tastes, then pick out the ingredient you think you need more of, and add it. Nobody's going to call the Cucumber Cops on you. If you can't seem to get it to taste the way you want, then either you don't like one of the ingredients, or you're trying to hard. Go play a round of golf, fish, or watch Terminator for the gazillionth time. Come back and try it again. And good luck.
Tomato Salsa
This really did have me worried. Well, not the kind of worry that changing a tire on a busy highway would give me. But I did have reservations. I mean, have you ever looked at the bad part of a tomato? It looks really gross. Plus, if you cut that off, how much tomato will you have left? Isn't it better to throw them on the compost pile so your dog will have other animals to chase? Nonetheless, I cut off the bad places. And I was surprised how very little of the tomato was affected under the skin. Not much at all actually. So I chunked it up, added some onions, oregano, basil, fresh ground pepper and sea salt. That's it. Nothing else. I let the juice of the vegetables do the rest. And just like the recipe above, if you don't like it...either take something out or add something to it. Don't get stuck like a deer in the headlight. Just do it.
