May 7, 2015 Lunchbox

This lunch box was pretty spectacular, if I do say so myself. I wanted to do something sort of light. Wraps fit that description, since it's not a lot of bread. The fillings also lean to the healthier side. Refried bean base, avocado, lettuce, tomato, and black beans on the top give it plenty of flavor. Especially when you sprinkle it with fresh ground pepper and sea salt. I also cut up fresh oregano, basil, and thyme to sprinkle on it. This was such a deviation from my normal lunch box. My wife promised not to look at it until lunch. When she did, she was really surprised.

Blame It On My Eyes

My wife has this little expression. She says "Your eyes are bigger than (insert item)." She uses it to point out my proclivity for "over-anything-ing". For example, when we we went to look at automobiles I was looking at the Escalades. She looked at me and said 'Your eyes are bigger than your wallet!" So we drove off in a Cruze. She's happy with it and my wallet is happy too.

Christmas 2014

Apparently our family had burgers on our brains. I bought burger presses for all the boys. I got them because I really like them. I've had one for years. It's the old kind with a hinge. It's metal. It's heavy. And I use it whenever I'm making some sort of special burger. So this was a gift I  would be happy to give. Imagine how happy I was when I got one back! Especially one that would make stuffed burgers. It was exactly what I wanted. After eating this, I had to lay down for a nap.  It is a big, filling meal.

I Waited One Whole Day

That's how much I wanted to use this thing. So I headed to the store and bought hamburger meat, cheese, mushrooms, and onions. I had decided to keep the first try as easy as possible. I'm glad I did. They were tasty, huge, and very moist. The stuffing stayed in place when I cut them in half.  I don't thank that would have happened if there were more stuffing.

The Tasty Sandwich Project

No Recipe Required Sandwich

My day started at 5AM. I ran 6. 5 miles to get it started. Then I cut the grass and trimmed the edges. So I was pretty hungry.  But I have a garden. I work hard at it. I grow stuff that I can eat.  Greens, tomatoes, peppers, and more.  I decided today that I wanted to fix me a sandwich from the garden. So I picked a tomato, pulled up an onion, and cut some lettuce.  I had some mung bean sprouts that I had grown too. So I put some Hain's Organic Canola Mayonnaise on some Healthy Nut 16 Whole Grain bread and started loading it up. The sliced tomato, onions, lettuce and mung beans looked a little lonely.  I added avocado and a slice of havarti cheese. I still thought it was missing something, so I went back to the garden and got a few basil leaves and oregano.  I topped it off with a couple of shake of pepper and salt... and it was ready. I don't think you need a recipe for this.  Just put the stuff on it that you think will make yours taste the way you want it, and eat it.
